Leaf Spice Cookies

These cookies are the perfect Thanksgiving cookie to share with friends and family! Get the kids in the kitchen over Thanksgiving break; these cookies are like an art project!

Spice Cookie Recipe


1 c. butter- softened

1.5 c. brown sugar

1/3 c. molasses

2 eggs

1 Tb. cinnamon

2 tsp. ginger

4 1/2 c. flour


Instructions:

  1. Preheat oven to 350 degrees

  2. In a mixer, cream butter and sugar. Next, add the eggs and molasses.

  3. Mix the flour and spices together in a separate bowl.

  4. Gradually add the flour mixture to the mixer.

  5. Add a little flour to your workspace and roll out dough to 1/4" thickness.

  6. Bake 7-9 minutes. (Your cookies will be soft.)

  7. Cool

Royal Icing Recipe

**This is my go-to royal icing recipe. It makes a lot of icing. Cut recipe in half for this project.


3/4 c. water

1 tsp. cream of tartar

5 Tb. meringue powder

appx 2 lb. powder sugar


Instructions:

  1. Mix water and cream of tartar in a mixing bowl

  2. Mix in meringue powder

  3. Add powder sugar and mix with a paddle attachment. Add powder sugar if the icing is runny.

  4. Add water until your royal icing is the consistency you want.


Royal Icing Tips:

-Start with thick icing and gradually add water as needed.

-The key to beautifully decorated sugar cookies, is the right consistency icing. You want your icing flood consistency for this recipe. Not too thick, but not too runny.

-Try not to incorporate bubbles into your icing. So mix slowly first to break up the bubbles.


Decorating


-Transfer royal icing to piping bag. You can just cut off the tip or add a coupler and piping tip (I used #3) I also like to add a clip to the top.

-Start by piping the outline of the cookie.

-Then squeeze the bag to fill in the icing. Use a toothpick to spread the icing.

-Leave cookies uncovered until the royal icing is stiff.

Now, here comes the fun part!

-Squeeze your desired gel food colors on a plate.

-Take a strip of paper towel and fold several times.

-Dampened the paper towel and dab in the food coloring.

-Layer colors on your cookie to your desired look. It's a bit messy, but it's a lot of fun!
